After a long winter of sitting idle, I finally fired up my New Holland after it's been in storage and saw that the oil light flickers when it's at low RPM. The oil is fresh and topped off, so I'm starting to wonder if it's just a sensor issue or if there's something more serious going on.

yeah, this is a common issue after a long storage. A lot of times, the oil pressure sending unit (the sensor) gets a little gummed up, and it doesn't give a consistent reading, especially at low RPMs.
Another possibility is a clogged screen in the oil pump. When the tractor sits for a long time, debris can settle and get sucked into the screen, which starves the pump and causes the light to flicker
